Kaju Katli is a cherished sweet across all age groups in India, yet the combination of high market prices and concerns about ingredient purity often deters people from buying it. Fortunately, you can prepare this delicacy easily in your own kitchen. By using a simple process involving just cashews and sugar, you can create soft, mouth-watering Kaju Katli that matches the standard of any professional halwai. With these straightforward tips, your homemade version will turn out perfect even on your first attempt.
Required Ingredients
Making Kaju Katli at home requires very few items. You will need 2 cups of cashews; if you have broken cashews, feel free to use them as there is no difference in the final taste. Additionally, keep 1 cup of sugar, 1 teaspoon of ghee to grease your tray or butter paper, and optional silver leaf (vark) for garnishing. With these basic ingredients, you can easily prepare a premium, delicious treat.
Preparation Method
Begin by grinding the cashews into a fine powder. It is important to use the 'pulse' setting on your mixer rather than running it continuously, as constant grinding can cause the cashews to release oil, making the powder clumpy. Once you have a fine powder, pass it through a sieve to ensure a uniform, smooth texture for your dough.
Cooking the Mixture
Take a non-stick pan and add 1 cup of sugar along with half a cup of water. Cook this mixture for 3 to 4 minutes until the sugar dissolves completely and the syrup feels slightly sticky. Turn the flame to a low setting and gradually incorporate the cashew powder, stirring constantly to prevent the formation of any lumps. At this stage, you may add a little desi ghee to enhance the flavor and give the sweet a smoother texture.
Setting and Cutting
Continue to cook the cashew and sugar mixture on low heat until it leaves the sides of the pan and forms a dough-like consistency. To verify it is done, take a small portion of the mixture and try to form a ball; if it does not stick to your fingers, the mixture is ready. Turn off the heat and let the dough cool until it is lukewarm. Transfer the dough onto a greased plate or butter paper and knead it well until it becomes smooth.
Place another sheet of butter paper on top and roll the dough to your desired thickness using a rolling pin. You may apply the silver leaf if you wish to add a festive touch. Allow the sheet to set for 10 to 15 minutes so that it firms up properly. Finally, use a sharp knife to cut it into the traditional diamond shapes. Your fresh, soft, and delicious homemade Kaju Katli is now ready to serve and enjoy for any special occasion.
