Getting out the door for office on time while still eating something filling is never easy. That's where a paneer bhurji sandwich fits in perfectly. It takes just 10 minutes to put together and, being loaded with protein, keeps energy levels up through the day. It also packs well for kids' lunch boxes or office tiffins. Here's the full step by step recipe.
Ingredients you'll need
- Paneer: 200 grams (hand mashed or grated)
- Bread slices: 4 to 6
- Onion: 1, finely chopped
- Tomato: 1, finely chopped
- Green chilli: 1, finely chopped
- Coriander leaves: finely chopped
- Spices: half a teaspoon turmeric, half a teaspoon red chilli powder, half a teaspoon garam masala
- Salt: to taste
- Butter: for cooking and toasting
- Green chutney or tomato ketchup
How to make the paneer bhurji
Heat a spoon of oil or butter in a pan. Add the finely chopped green chilli and onion, and saute until the onion turns light pink. Add the chopped tomato next and cook until it softens slightly.
Now add turmeric, red chilli powder, garam masala and salt to the pan, and roast the spices on low flame for about half a minute. Add the mashed paneer, mix everything well, and let it cook for around 2 minutes. Finish with finely chopped coriander leaves and turn off the flame. The paneer bhurji filling is now ready.
Assembling and toasting the sandwich
Take two slices of bread. If you like it spicy, spread green chutney on one slice and tomato ketchup on the other. Spread a generous layer of the prepared paneer bhurji over one slice and cover it with the second slice.
Heat a tawa or sandwich maker and grease it lightly with butter. Place the sandwich on it and toast on low to medium flame on both sides until golden and crisp.
How to serve it
Cut the sandwich in half and serve hot alongside tea or coffee. It's light, protein-rich and simple enough to whip up even on the busiest office mornings.
