To prepare makhana paag, begin by gathering all the necessary items in their precise quantities. You will need 3 cups or approximately 100 grams of phool makhana (foxnuts). For the sweet base, gather 1.5 cups of sugar along with 3/4 cup of water to craft the syrup. Additionally, keep ready 1/2 cup of grated dry coconut, 1/4 cup of finely chopped cashews and almonds, 2 tablespoons of melon seeds (magaj), 1/2 teaspoon of green cardamom powder, and 3 to 4 tablespoons of pure desi ghee.
Roasting Nuts and Foxnuts
Start the preparation process by placing a heavy bottomed pan over medium heat and melting 2 teaspoons of desi ghee. Add the finely chopped cashews, almonds, and melon seeds into the pan, roasting them on a low flame until they turn light golden brown. Transfer the roasted nuts to a plate. In the same pan, add the remaining desi ghee and toss in the 3 cups of phool makhana. Roast the foxnuts on low flame while stirring continuously for about 5 to 6 minutes. Once a roasted makhana crushes easily between your fingers, turn off the stove. Allow the makhana to cool down before grinding them coarsely in a mixer. Lightly dry roast the grated coconut in the pan without ghee and set it aside.
