When hunger strikes between regular meals and cooking time is limited, a traditional serving of masala mudi offers a satisfying solution. Widely relished across households in Jharkhand, this preparation stands out because it demands very little time and requires only basic pantry staples. Chef Shalu, associated with Indian-Videshi Food Cafe in Bokaro, has broken down the cooking process into a simple routine that takes barely 5 minutes to complete on a home stove.
Pantry Items Required for Preparation
The dish relies on basic ingredients that are typically present in most kitchens. The primary base consists of mudi, complemented by raw or roasted peanuts. Fresh vegetables include finely chopped onions, finely diced tomatoes, and freshly chopped coriander leaves. The tempering base is built using curry leaves, whole cumin seeds, and mustard oil. A pinch of ground turmeric is also incorporated to enhance both the color and overall flavor of the spice blend.
Sautéing the Aromatic Base
Preparation begins by heating a moderate amount of mustard oil in a pan or wok. Once the oil reaches the right temperature, cumin seeds and fresh curry leaves are introduced to release their natural aromatics through gentle frying. Finely chopped onions and tomatoes are then added to the hot oil along with a measure of turmeric. The mixture is roasted thoroughly until the onions and tomatoes soften. At that stage, the peanuts are tossed into the pan and cooked for approximately 2 minutes so they achieve an even, toasted texture.
Incorporating the Puffed Grains and Serving
The distinctive step in this regional method involves briefly dipping the mudi into light water and lifting it out immediately, allowing any excess moisture to drain away. This softened mudi is then tipped directly into the pan holding the seasoned vegetable mixture. Everything is stirred together over gentle heat until the grains are evenly coated with the spices. Freshly chopped coriander leaves are scattered across the top just before taking the dish off the stove.
