Winter mornings often bring a variety of stuffed flatbreads to the dining table, with potato, spinach, and bathua being the most common choices. However, if you want to try something entirely new for breakfast this season, cabbage parathas make for a wonderful alternative. These parathas are remarkably delicious and surprisingly simple to prepare at home. The best part is that they take very little time to cook, making them suitable for breakfast, lunch, or dinner. From young children to the elderly, people of all age groups thoroughly enjoy their unique flavor and texture.
Preparing the Cabbage and Ingredients
Sharing the details of this recipe, Dholpur-based homemaker Prabha Sharma explains that making these parathas begins with cleaning the fresh produce properly. First, remove the outermost leaves of the cabbage brought from the market and discard them. Wash the remaining cabbage thoroughly with clean water to get rid of any dirt or impurities. Chop the cabbage into very fine pieces and place them in a bowl. Similarly, chop the onions, green chillies, and fresh coriander leaves into fine pieces as well. Combine all these chopped ingredients together with the cabbage and mix them well.
Stuffing and Dough Preparation
Once the vegetable base is ready, it is time to add the spices and seasonings. Add red chilli powder, coriander powder, dry mango powder, garam masala, salt according to taste, and a spoonful of ghee to the mixture. Blend all these components thoroughly using your hands to create a flavorful and well-seasoned stuffing for the flatbreads. Next, knead wheat flour using adequate water to form a smooth dough. Keep in mind that the dough must remain soft for the parathas to turn out well. After kneading, cover the dough and let it rest for about 5 minutes. Afterward, divide the dough into small equal portions and form smooth balls. Take one ball, roll it out into a small circular shape, and place a portion of the cabbage stuffing right in the center. Seal the edges from all sides carefully and roll it out gently once again with light hands.
Cooking on Medium Heat with Ghee
Place the rolled paratha on a preheated griddle or tawa. Apply ghee on both sides and cook it thoroughly over medium heat until it turns golden brown and crispy. Once the paratha achieves the right crispiness and color, remove it from the tawa. This simple process results in a hot and delicious cabbage paratha ready to serve. According to Prabha Sharma, these parathas can be relished alongside potato curry, fresh curd, onions, or a spicy garlic chutney. They also pair wonderfully with a hot cup of morning tea and can be conveniently packed into children's school lunchboxes. Furthermore, if guests arrive unexpectedly at your home, these flavorful parathas can be quickly prepared to welcome them.
