Crafting the Quick Rabri Filling
Creating a rich rabri filling does not require hours of slow-boiling milk. Instead, an efficient instant method delivers the same thick, creamy texture in minutes. Begin by taking a mixing bowl and adding 4 tablespoons of milk powder alongside 2 tablespoons of sugar. Incorporate half a teaspoon of cardamom powder, a few fragrant strands of saffron, and finely chopped pistachios into the bowl. Next, add half a cup of fresh cream (malai). Whisk all the ingredients together thoroughly until the mixture becomes smooth, uniform, and rich. Once blended, place the bowl inside the refrigerator for approximately 10 minutes. Chilling allows the rabri mixture to firm up, making it easy to roll into small, neat balls later.
Cooking the Coconut Dough Base
While the filling sets in the refrigerator, prepare the outer coconut mixture. Heat 1 tablespoon of ghee in a heavy-bottomed pan over low heat. Pour in 1 cup of milk along with half a cup of sugar, stirring gently until the sugar dissolves completely. Next, gradually introduce half a cup of milk powder while whisking continuously to prevent any lump formation. Once the liquid mixture is smooth, add 2 cups of desiccated coconut and adjust the heat to medium. It is essential to stir the mixture constantly so that it cooks evenly and does not stick or burn at the bottom of the pan. Cook until the coconut mixture thickens and gathers into a cohesive dough that can be easily shaped. Remove the pan from heat and spread the coconut mixture onto a broad plate to cool slightly. Ensure it is lukewarm rather than piping hot, as hot dough can be difficult to handle and shape.
Assembling, Rolling, and Garnishing
Retrieve the chilled rabri mixture from the refrigerator and roll it into tiny, bite-sized balls. Take a small portion of the lukewarm coconut dough, flatten it gently on your palm, and place a rabri ball right in the center. Fold the edges of the coconut dough over the filling, completely enclosing the rabri center, and gently roll it between your palms to form a smooth sphere. Once shaped, roll each laddu in dry desiccated coconut to give it a neat, textured exterior coating. Finally, decorate each piece with slivered pistachios, saffron strands, and dried rose petals.
