Traditional Indian jalebis are universally recognized for their crisp golden-yellow spirals, typically prepared from fermented refined flour batter fried and soaked in sugar syrup. However, experimenting with vibrant kitchen ingredients offers a unique alternative in the form of beetroot and white urad dal jalebi. This preparation completely transforms the presentation through the natural rich crimson tint of beetroot while incorporating ground urad dal to achieve an exceptionally crisp texture. Fried in pure desi ghee and immersed in fragrant sugar syrup, this dessert delivers a delightful balance of crunch and sweetness, which is elevated further when served alongside a bowl of chilled or mildly warm rabri.
Preparing the Beetroot and Dal Batter
The preparation begins by thoroughly washing a fresh beetroot and boiling it until soft. Once it cools down completely, peel off the skin and process the vegetable in a mixer grinder to obtain a smooth, lump-free puree. Simultaneously, wash the white urad dal and leave it to soak in water for about an hour. After the lentils soften, grind them thoroughly into a fine paste.
In a wide mixing bowl, bring together the refined all-purpose flour, ground white urad dal paste, gram flour (besan), baking soda, and the freshly prepared beetroot puree. Whisk the blend continuously while incorporating small measures of water as needed. The final batter must maintain an optimal dropping consistency, thick enough to hold spiral shapes when piped into hot ghee yet fluid enough to pass smoothly through the dispensing cloth.
Simmering the Saffron Syrup and Frying
To craft the syrup base, combine 200 grams of sugar with a small amount of water in a pan and let it simmer over low heat. Add a dash of fresh lemon juice into the boiling mixture to prevent the sugar from crystallizing. Once the syrup reaches the desired consistency, stir in ground cardamom powder alongside 2 to 3 saffron strands, allowing the aromatics to disperse evenly through the liquid.
Heat an adequate quantity of pure desi ghee in a broad, shallow pan over medium flame. Transfer the prepared batter into a traditional jalebi cloth or piping bag. Gently squeeze the batter in circular motions over the hot ghee to form concentric rings. Fry each piece evenly on both sides until thoroughly crisp and golden. Immediately transfer the hot jalebis from the ghee directly into the warm aromatic syrup, letting them rest briefly to soak up the sweetness before draining them out onto a serving tray.
Cooking Thick Rabri and Plating the Dish
The accompanying rabri requires 1 liter of full-cream milk simmered slowly in a heavy-bottomed vessel over low heat. As the milk reduces, scrape down the cream layers collecting on the sides and stir them back into the simmering pot. Sprinkle the remaining cardamom powder and saffron strands into the vessel, which lends the reducing milk a gentle fragrance and pale golden hue.
Continue stirring the milk until it reduces to a dense, creamy consistency, then mix in 30 grams of sugar and cook for a few more minutes until completely dissolved. Remove the rabri from the flame and let it cool down. Serve the crisp beetroot jalebis topped with or alongside this chilled or gently warm rabri. The earthy sweetness of the beetroot imparts a striking visual contrast, while the rich, creamy dairy elements perfectly balance the crisp sugar-soaked spirals.
