Farmers in Ballia cultivate Bengal gram (chana) on a large scale. Once the harvest is brought in from the fields, the process of transforming gram into sattu relies heavily on age-old village traditions. In local rural communities, traditional furnaces known as 'gosar' are prepared for roasting the grain. Women gather around these bhatti furnaces to roast chana and other grains while singing traditional folk songs, keeping cultural heritage alive throughout the production process. After roasting, the grain is ground in traditional flour mills (chakki) to produce fresh sattu. Sattu can be enjoyed in various ways: it is commonly consumed as a refreshing sattu lassi or kneaded into a dough using salt and water, served alongside spicy pickles, green chillies, or homemade chutney.
