Preparations for August 15, Independence Day, are in full swing across the country. Shops and marketplaces are decked out with national flags, tricolor clothing, kites, and decorative caps. Educational institutions and schools are organizing special cultural programs, generating immense excitement among children and adults alike. Festival celebrations become twice as enjoyable when there are children at home, as young ones love indulging in festive themed dishes. To make this patriotic occasion even sweeter and more memorable, you can easily prepare tricolor coconut barfi at home. This three-layered dessert is not only visually stunning with its vibrant saffron, white, and green shades, but its rich flavor is guaranteed to delight everyone in the family.
Ingredients Required for Tricolor Coconut Barfi
Creating this beautiful and delicious sweet requires just a handful of basic kitchen ingredients. The primary components of this recipe are desiccated coconut powder and condensed milk, making it quick and hassle-free to put together.
- Desiccated Coconut: 2 cups of white desiccated coconut powder.
- Condensed Milk: 1 cup of sweetened condensed milk.
- Ghee: 1 teaspoon of clarified butter for roasting and greasing.
- Cardamom Powder: 1 teaspoon of ground cardamom for aroma and flavor.
- Food Coloring: Saffron (orange) and green food colors.
Preparing and Cooking the Coconut Base
To begin making the barfi, place a pan over low heat and melt 1 teaspoon of ghee. Add 2 cups of desiccated coconut powder to the pan. Using store-bought desiccated coconut is ideal because it is bright white, ensuring a very clean white layer for the tricolor effect. However, if you are using fresh or whole dried coconut from home, be sure to peel off the outer brown skin first before finely grating the inner white kernel.
Gently stir the coconut powder on low flame for a minute to remove excess moisture without letting it change color. Next, pour in 1 cup of sweetened condensed milk. Cook the mixture continuously over low heat while stirring until the coconut and condensed milk combine and thicken into a dough-like consistency that starts pulling away from the sides of the pan. Sweetened condensed milk usually provides sufficient sugar, but if you prefer an extra sweet treat, you can mix in a small amount of powdered sugar at this stage.
Creating the Three Colored Layers
Once the mixture reaches the desired thick consistency, remove the pan from heat and stir in the cardamom powder. Divide the hot coconut mixture evenly into three equal portions. Leave one portion untouched as the natural white layer, representing the middle strip of the flag. Take the second portion and mix in a few drops of green food coloring until uniformly colored. In the third portion, incorporate saffron food coloring to achieve a bright orange shade.
Setting and Cutting the Barfi
To set the sweet, prepare a tray or dish by greasing its base with a little ghee. Alternatively, line the tray with butter paper and lightly grease it, which helps the set barfi lift out effortlessly later.
Begin layering by spreading the green coconut mixture evenly at the bottom of the tray, pressing it down firmly with a spatula to form a flat layer. Carefully spread the white coconut mixture directly over the green layer to form the middle tier. Finally, place the saffron mixture on top, smoothing it out evenly. Allow the layered sweet to cool completely at room temperature or in the refrigerator until firm. Once set, cut the dessert into square or diamond shapes using a sharp knife. Your homemade tricolor barfi is ready to serve and enjoy.
