It is quite common for a few chapatis to remain after dinner, leaving people wondering what to do with them the next morning. If you frequently discard leftover rotis, you should stop doing so immediately. You can easily utilize them to prepare delicious and crunchy cutlets for your morning breakfast. Making these does not take much time, and by using vegetables already available in your kitchen, you can enhance their flavor even further.
Essential Ingredients for the Cutlets
To prepare this simple recipe, you will need 3 to 4 slices of bread, 2 boiled potatoes, 1 small onion, 1 green chilli, a few fresh coriander leaves, and half a capsicum. For flavoring, use red chilli powder, cumin powder, chaat masala, and salt according to your taste. To bind the mixture together properly, you can use 1 to 2 tablespoons of gram flour or cornflour, along with a little cooking oil to fry the cutlets.
First, break the bread slices into small pieces and grind them coarsely. Make sure not to turn them into a fine powder, as this can ruin the desired texture of the cutlets. Next, take a large mixing bowl and mash the boiled potatoes thoroughly. Add the coarse breadcrumbs, finely chopped onion, green chilli, capsicum, and fresh coriander leaves to the potatoes. Following that, add the red chilli powder, cumin powder, chaat masala, and salt, mixing everything together seamlessly.
Shaping and Cooking the Cutlets
If the mixture feels overly soft or sticky, incorporate a little bit of gram flour or cornflour to fix the consistency. Knead the mixture well and divide it into small portions. Apply a little oil to your hands, then shape each portion into a round or oval patty and press it gently to flatten it slightly. Prepare all the cutlets in the exact same manner.
Heat a little oil on a non-stick pan or a regular tawa. Place the cutlets on the pan and cook them over medium heat until they turn golden brown and crispy on both sides. Be careful while flipping them so they do not break apart. Serve these hot cutlets alongside green coriander-mint chutney, tomato ketchup, or curd.
