Deciding what to cook during hectic morning routines or addressing spontaneous hunger pangs in the late afternoon often presents a challenge in many households. When families search for something that cooks rapidly without compromising on flavour, vegetable macaroni consistently stands out as a dependable choice. Children particularly enjoy pasta-based meals, and folding vibrant seasonal vegetables into the mix elevates the dish into a wholesome, appealing snack. Sushma Tiwari, a resident of Vasundhara in Delhi, shared an accessible home recipe for cooking this satisfying vegetable macaroni without unnecessary complexity.
Gathering the Ingredients
Preparing this meal begins with selecting fresh produce alongside dry pasta. The base recipe brings together macaroni with finely chopped onions, diced tomatoes, capsicum, carrots, and green peas. For seasoning and dressing the dish, cooks should arrange salt, red chilli powder, ground black pepper, chilli flakes, tomato sauce, and a small quantity of cooking oil for sautéing the base.
Boiling the Pasta to the Right Texture
The cooking process starts by heating adequate water in a deep pan and seasoning it with a pinch of salt. Once the water reaches a vigorous rolling boil, add the macaroni and cook it according to the duration marked on the packaging. Cooks should take care not to overboil the pasta until it turns mushy, since it will undergo further cooking in the skillet with the vegetable mixture. After boiling, strain the macaroni immediately, discard the hot water, and set the cooked pasta aside.
Sautéing the Vegetable Medley
Next, heat a modest amount of cooking oil in a pan over medium heat. Add the chopped onions first, sautéing them gently until they turn light and translucent. Then introduce the chopped carrots, green peas, and diced capsicum, letting them cook for a brief period so they soften while still retaining their signature crisp crunch. Stir in the chopped tomatoes next, cooking the mixture until the tomatoes break down and turn tender. At this stage, incorporate the salt, red chilli powder, black pepper, and chilli flakes, followed by a splash of tomato sauce to impart a tangy balance.
Final Toss and Serving Suggestions
Once the vegetable base and spices are thoroughly combined, gently tip the boiled macaroni into the skillet. Stir carefully to coat each piece of pasta evenly with the sautéed vegetables and seasoning mix, and cook over gentle heat for an additional 2 to 3 minutes. The hot vegetable macaroni is now ready to serve immediately. It serves as an ideal packing option for school lunchboxes, a quick breakfast, or a light tea-time snack. To add an extra dimension of indulgence, home cooks can also grate a little cheese and sprinkle dried oregano across the top just before serving.
