Preparing The Base Gravy And Sautéing Cashews
To achieve a rich and thick base for Shahi Paneer, cooking the foundational ingredients correctly is essential. Begin by finely chopping onions, tomatoes, ginger, garlic, and green chillies into uniform pieces. Heat a small amount of cooking oil in a pan over medium heat. Once the oil is hot, add all the chopped vegetables to the pan along with whole cashews. Cashews play a pivotal role in this recipe by imparting a creamy, silky, and royal texture to the gravy. Sauté all the ingredients on a low flame, stirring occasionally, until the onions turn soft and the tomatoes are thoroughly cooked.
