The Secret Behind the Softness

The preparation process is meticulous and intentional. Initially, the flour is kneaded thoroughly and allowed to rest so that it can rise properly. Rajesh explains that before kneading, a small amount of edible soda and mawa (khoya) are added to the dough, which acts as the secret ingredient to keep the Khurma soft for an extended period. Once the dough has risen, it is carefully shaped into small, uniform pieces.

Frying and Coating Process

After being shaped, the dough pieces are deep-fried in a kadhai of hot oil until they turn a deep, rich red color. Once they achieve this perfect hue, the pieces are removed from the oil and allowed to cool. Simultaneously, a specialized syrup is prepared using sugar and cardamom to enhance the flavor. The consistency of this syrup is kept intentionally thin, similar to water, ensuring that the fried Khurma can absorb the liquid adequately without losing its structural integrity.
