What You Need for Dry Fruit Lassi
To make this creamy lassi you will need 500 grams of milk, three spoons of custard powder, three spoons of curd, 50 grams of sugar, three spoons of butter, 12 almonds, 12 pistachios, 12 cashews, 1 green cardamom, a few strands of saffron, finely chopped dry fruits, and water as needed.
The Easy Method
Step one: Start by mixing three spoons of custard powder into a little milk, stirring well so that no lumps remain.
Step two: Now turn on the gas, pour half a litre of milk into a large vessel and heat it well. Alongside, drop a few strands of saffron into a small bowl and let them dissolve.
Step three: Once the milk is properly hot, add the dissolved custard powder and the saffron milk and mix thoroughly. This gives the lassi a lovely colour. Then switch off the gas.
Step four: Let the milk cool slightly. When it is just lukewarm, add three spoons of curd as a starter, mix it in well, and set it aside to set for ten to twelve hours.
Step five: After the set time, check it and the curd will have formed. Now whisk it until no lumps remain, adding a little water in between as you go.
Step six: Finally, add the finely chopped almonds, pistachios, cashews and green cardamom and mix. Pour the lassi into a glass, top it with a spoon of butter and garnish with dry fruits before serving.
