Its smooth sweetness appeals to all age groups, especially children. Chef Devashish from Bokaro has outlined a simple and approachable method to prepare this delicious custard fruit pudding in any home kitchen.
Essential Ingredients for the Pudding
Crafting this flavorful sweet treat requires only a few basic ingredients that are readily available in most households
- Approximately one liter of fresh milk
- Around three tablespoons of custard powder
- Sugar adjusted according to personal taste
- A selection of fresh seasonal fruits, such as apples, bananas, grapes, and pomegranate seeds
Depending on seasonal availability and personal preferences, other compatible fruits can also be incorporated to enhance both flavor and presentation.
Preparing a Smooth Custard Slurry
The preparation begins with blending the custard powder correctly to avoid clumps. Take a small bowl with a portion of cold milk and add roughly three tablespoons of custard powder to it. Whisk the mixture thoroughly using a spoon until the powder completely dissolves into a uniform liquid. It is crucial to ensure that no lumps form during this step. Once a smooth, lump-free slurry is achieved, set the bowl aside.
Cooking and Thickening the Milk Base
Pour about one liter of milk into a cooking pot and place it over high heat until it reaches a rolling boil. As soon as the milk boils, reduce the flame to low. Gradually pour the prepared custard slurry into the warm milk in a slow, steady stream. While pouring, stir the milk continuously with a ladle to prevent the custard from settling at the bottom or forming clumps.
Add sugar according to taste while keeping the flame gentle. Continue stirring and simmering the mixture steadily until the milk thickens noticeably into a rich, velvety custard texture. Once the desired creamy consistency is achieved, turn off the heat and allow the cooked custard to cool down completely to room temperature.
Adding the Fruity Twist and Serving
After the custard has cooled down entirely, fold in the chopped pieces of fresh apples, bananas, grapes, and pomegranate seeds. Gently stir everything together so that the vibrant fruits are evenly coated by the creamy sauce. Transfer the dish to the refrigerator for a while so it chills thoroughly before serving. Once properly chilled, the custard fruit pudding is ready to be dished out into bowls, offering an enticing visual appeal alongside its refreshing, creamy flavor.
