If you want to recreate the rich taste of a restaurant-style veg biryani in your own kitchen, this simple recipe makes it entirely possible. All you need to do is gather the required ingredients and follow a few straightforward preparation steps.
Preparation and Soaking the Ingredients
To begin making veg biryani at home, you first need to choose aromatic pulao rice. Wash the rice thoroughly with clean water and let it soak for about 15 to 20 minutes. While the rice soaks, chop the onions and green chilies finely. Additionally, soak the soyabean chunks in salted water so that they absorb the moisture and become wonderfully soft.
Sautéing the Spices and Soyabean
Once the prep work is done, heat some cooking oil in a pressure cooker or a heavy-bottomed vessel. Add the chopped onions, green chilies, whole warm spices, and the soaked soyabean chunks into the hot oil. Allow everything to fry until the ingredients turn slightly reddish in color. Next, add ginger-garlic paste, biryani masala, salt, coriander powder, and red chili powder according to your taste preference.
Sauté this spice mixture on medium-low heat for at least 5 to 10 minutes. The cooking process for the masala continues until you notice oil separating naturally from the edges of the mixture.
Mixing the Rice and Simmering
Recipe expert Niharika explained that once the masala is roasted and releases a rich aroma, you should add the soaked rice after draining all the excess water. Stir and mix the rice continuously with the spiced mixture for about 5 minutes so that every single grain gets well-coated with the flavors.
When the rice and spices are thoroughly combined, pour in the required amount of water. Let the mixture cook on low heat for roughly 20 to 25 minutes. Continue cooking until the rice softens completely and the water evaporates entirely. Once cooked, sprinkle a light touch of warm garam masala over the top and cover the vessel with a lid.
About 5 minutes after adding the garam masala, mix the biryani gently and garnish it with freshly chopped coriander leaves on top. Your flavorful veg biryani is now completely ready to be served hot to your family. This entire cooking method takes roughly 30 to 35 minutes from start to finish.
