Morning rush often brings the daily dilemma of deciding what to make for breakfast that is both quick and appealing to everyone. In such situations, pasta serves as a wonderful choice. It does not require much time to prepare and can be easily put together using common vegetables and spices already lying around the house. From children to adults, everyone relishes a good plate of pasta.
The preparation begins by boiling water in a deep vessel placed over a stove. Add a pinch of salt and a spoonful of oil to the water. Once the water reaches a rolling boil, add the pasta and let it cook for about 7 to 10 minutes. Ensure that the pasta is not overcooked and remains slightly firm to the bite. Turn off the heat once done, strain the pasta through a sieve, and rinse it immediately with cold water to halt the cooking process.
Next, get your vegetables ready for the dish. Chop onions, tomatoes, capsicum, carrots, and green chillies into small pieces. Avoid chopping the vegetables too finely, as slightly noticeable chunks enhance the texture and flavour while eating the pasta.
Heat a pan on the stove and add one to two spoons of oil or butter. Once the oil gets hot, toss in the chopped onions and green chillies, sautéing them until they turn light golden. Following this, add the capsicum, carrots, and any other vegetables of your choice, cooking them on high flame for 2 to 3 minutes while stirring continuously.
When the vegetables are partially cooked, add the chopped tomatoes into the pan. Season with salt according to taste, a dash of red chilli powder, black pepper, pasta seasoning, and chilli flakes. Mix everything thoroughly and cook for about 2 minutes until the tomatoes soften up and blend with the spices.
Recipe expert Niharika notes that once the vegetables turn light golden, the boiled pasta should be added to the mix. Combine the pasta gently with the vegetables and spices. While stirring, be careful not to break the pasta strands, so use gentle and slow motions.
After cooking the pasta for a few minutes, turn off the stove. Transfer it hot onto a serving plate and garnish with cheese, oregano, or chilli flakes on top before serving. This dish can be enjoyed in the morning alongside tea, coffee, or juice.
