- Whole wheat flour: 2 cups
- Spinach: 2 cups (finely chopped leaves or blanched smooth puree)
- Paneer: 1/2 cup (finely grated to boost protein content)
- Gram flour: 2 tablespoons
- Ginger and green chilli paste: 1 teaspoon
- Carom seeds: 1/2 teaspoon
- Asafoetida: a pinch
- Garam masala: 1/2 teaspoon
- Dry mango powder: 1/2 teaspoon
- Salt: according to personal taste
- Desi ghee or cooking oil: for roasting on the griddle
Preparing the Dough and Spice Blend
Begin by rinsing the fresh spinach leaves thoroughly under cold water to eliminate any residual dirt. Depending on preference, mince the leaves finely with a knife or blanch them briefly before blending into a velvety puree. Transfer the whole wheat flour into a wide mixing bowl or platter. Add the gram flour, grated paneer, processed spinach, ginger-chilli paste, carom seeds, asafoetida, garam masala, dried mango powder, and salt together.
