Beetroot has long remained confined to fresh salads, morning vegetable juices, or routine savory curries in most Indian households. However, students from the Department of Home Science at Government Women's Post Graduate College in Ghazipur have demonstrated that this deep red root vegetable can also serve as the star ingredient in festive confectionery. Their creation, a delicious and wholesome beetroot barfi, was unveiled during the Nutrifit Fiesta 2026, turning a regular vegetable into an appealing dessert.
Creative Nutrition at the Forefront of Campus Initiative
The culinary demonstration was staged as part of the broader National Nutrition Month and Seva Sankalp Abhiyan. The primary goal of this institutional campaign was to inspire young learners to think creatively about daily agricultural produce, discovering novel culinary methods that preserve nutrition while appealing to modern palates. Home science students Priya Pandey and Nazia Bano took the lead in this venture, combining practical kitchen skills with food science principles to present beetroot barfi as a viable alternative to heavy, refined sweets.
Step-by-Step Cooking Technique and Preparation Time
Explaining the technical preparation, Priya Pandey noted that the initial stage demands meticulous washing and peeling of fresh beetroots to eliminate surface impurities. The peeled roots are finely grated and simmered gently in milk over medium heat. This cooking phase allows the vegetable fibers to soften completely, gradually blending into a thick and unified pulp as the liquid reduces.
Once the beetroot achieves a tender texture and the moisture level drops substantially, milk powder is gradually incorporated. Constant stirring at this stage is essential to prevent scorching and keep the texture free of lumps while accelerating thickening. Ground green cardamom is stirred in toward the end to deliver a rich, traditional fragrance and taste profile. The hot, dense mixture is then poured onto a greased plate or tray and leveled smoothly. Chopped cashews, almonds, and assorted nuts are scattered across the top and pressed gently into the surface. After allowing the confection to cool and set firmly, it is sliced into diamond or square shapes. The entire process requires roughly 1 to 2 hours from preparation to slicing.
Ingredients and Ratios for Home Preparation
Recreating this wholesome confectionery at home requires modest, easily sourced ingredients. The recipe calls for 500 grams of fresh beetroot, roughly 500 milliliters of milk, and between 150 and 200 grams of milk powder. Sweetener may be added according to personal taste preferences. Additionally, half a teaspoon of cardamom powder and approximately 50 to 75 grams of mixed dry fruits provide the final flavor and crunch. Cooking slowly over controlled heat preserves the natural pigments, yielding an intense ruby hue without the aid of synthetic food colorings.
Nutritional Profile Highlighted by Science Faculty
Neha Maurya, a home science specialist at the women's degree college, underscored the substantial health benefits embedded in root vegetables like beetroot. She pointed out that everyday root crops house concentrated micronutrients that support metabolic balance. Specifically, a 100 gram portion of raw beetroot contains approximately 43 calories, 1.6 grams of protein, and 9.6 grams of carbohydrates.
Furthermore, the same serving delivers 2.8 grams of dietary fiber alongside 0.8 milligrams of iron, which contributes meaningfully to red blood cell formation and digestive regularity. The root vegetable is also a rich source of potassium and folate, both vital for cardiovascular stability and cellular repair. This successful kitchen experiment underscores how traditional festive confections can be elevated into nourishing treats by relying on the wholesome properties of everyday vegetables.
