The culinary tradition of the Bastar region in Chhattisgarh is celebrated for its reliance on simple, organic, and locally sourced ingredients. Among the wide variety of wild and cultivated greens, Kheda Bhaji holds a special place in the daily diet of the local population. Cooked with minimal spices to maintain its natural taste, this green leafy vegetable is commonly prepared alongside lentils or made into a tangy local soup known as Aamat. During the monsoon, it becomes a staple across households in the region.
Monsoon Cultivation and High Market Demand
With the arrival of the rainy season, villagers across Bastar cultivate fresh Kheda Bhaji in their kitchen gardens and backyard plots. Once harvested, these crisp greens are brought directly to local village markets and urban haats. Due to its popularity and limited seasonal availability, the vegetable sells out almost instantly upon arrival. Local consumers value it for its authentic flavor and healthy profile, free from heavy gravy or excessive seasoning.
Ingredients Required for Kheda Bhaji Dal
Preparing this traditional dish requires simple kitchen staples. The recipe calls for 50 grams of either Rahal dal (pigeon pea) or Chana dal (split chickpea), paired with 100 grams of fresh Kheda Bhaji. Additional ingredients include two chopped tomatoes, one finely chopped onion, two chopped green chillies, 1/4 teaspoon of turmeric powder, and salt according to taste. A small quantity of cooking oil is also needed for tempering.
Step by Step Cooking Process
Begin by washing the dal thoroughly and putting it to boil in a pot with two glasses of water. As the lentils start to soften, add the chopped Kheda Bhaji, green chillies, turmeric powder, and salt. After letting the mixture simmer for a few minutes, stir in the two chopped tomatoes. Cover the pot and allow all the ingredients to cook together on low heat for half an hour until the lentils and greens reach a tender consistency.
Once the dal and vegetable mixture is fully cooked, heat oil in a separate pan or wok. Add the chopped onions along with green chillies and sauté until they turn golden brown. Pour the cooked dal and Kheda Bhaji into the pan, stirring well to combine the tempered aromatics with the stew. Allow it to simmer briefly before taking it off the stove. This classic tribal style dish is best enjoyed hot with steamed rice or fresh rotis.
