Preparing a fresh and appealing evening snack for children every day often turns out to be a demanding task for parents. Young eaters naturally look for variety, appealing presentations, and great taste rather than regular everyday food. While traditional Mexican fast food often relies heavily on refined flour, satisfying snacks can be easily assembled at home using regular pantry staples. Radhika Prajapati, a homemaker residing in Koderma, has demonstrated a straightforward method to create crispy and flavourful tacos right at home using common whole wheat flour instead of refined flour.
Kneading and Resting the Wheat Flour Dough
The first phase of the recipe focuses on building a tender base for the tacos. According to Radhika Prajapati, the preparation begins by measuring two bowls of whole wheat flour into a broad mixing bowl. Gradual addition of clean water helps knead the flour into a smooth and pliable dough. Once properly brought together, the dough should not be rolled immediately; instead, it should be set aside under a cover to rest for roughly 10 to 15 minutes. Allowing the dough this brief resting period helps the gluten relax, ensuring that the rolled rounds remain intact and flexible.
Cooking the Savoury Potato and Vegetable Stuffing
While the dough rests, attention shifts to creating the savoury filling. To begin, boil four to five medium potatoes, peel them, and keep them ready. Alongside, finely chop capsicum, onion, green chillies, and fresh tomatoes into even pieces. Sweet corn kernels can also be incorporated into the mixture if desired for extra bite and flavour.
Next, place a cooking pan or kadai over the burner and heat a small measure of cooking oil. As soon as the oil reaches temperature, add the diced onions, capsicum, green chillies, tomatoes, and sweet corn into the pan. Sauté these vegetables together over medium heat for approximately three to four minutes until they turn slightly tender and show a pale golden-brown tint. At this stage, blend in salt according to taste, followed by turmeric powder, cumin powder, and black pepper powder, tossing everything to coat evenly.
Once the spices are integrated, introduce the pre-boiled potatoes directly into the pan. Break down the potatoes using a spatula and fold them thoroughly into the sautéed vegetable mix. Cook the entire filling for an additional one to two minutes so the aromas permeate the potatoes. Switch off the stove and transfer the prepared stuffing into a wide dish so that it cools completely before assembly.
Assembling and Griddling the Tacos
After the potato mixture cools down, turn back to the rested whole wheat dough and pinch out small, uniform dough balls. Roll each ball with a rolling pin into a thin flatbread. To achieve neat, consistent rounds, press a round steel bowl firmly onto the rolled sheet to cut clean edges. Take these trimmed rounds and lightly toast each one on both sides in a hot pan or kadai.
Once the bread is lightly griddled, place it flat and spoon a generous portion of the seasoned vegetable and potato filling across one half. To give the dish an attractive texture and appealing flavour for young eaters, layer grated cheese directly over the warm mixture. Fold the uncovered side of the bread over the filling to create the classic curved taco shape.
Finally, return the folded taco to the pan over low heat, cooking both outer sides patiently. Keep it over the flame until the cheese melts thoroughly into the filling and the exterior wheat shell achieves a crisp, golden crust. Following these simple steps, a batch of wholesome and delicious whole wheat tacos can be served hot for evening snacks.
