When mornings call for a quick yet satisfying breakfast option that comes together in very little time, tawa rawa dhokla makes for an excellent choice. Unlike traditional recipes that require elaborate steaming equipment, this variation is cooked directly on a flat pan or skillet with minimal preparation. Combining semolina and oats creates a wonderfully soft texture that pairs exceptionally well with spicy green chutney.
Required Ingredients and Setup
Preparing this dish does not demand a long grocery list or extensive kitchen prep. The core ingredients include one cup of semolina, half a cup of oats, half a cup of curd, fruit salt or eno, salt to taste, one teaspoon of mustard seeds, one teaspoon of sesame seeds, five to seven curry leaves, one teaspoon of red chilli powder, and cooking oil as needed. Before mixing, the oats should be ground into a fine powder so they blend smoothly with the semolina.
Preparing the Batter
Homemaker Nirma Devi explained that the process begins by combining the semolina and powdered oats thoroughly in a mixing bowl. Curd and an adequate amount of water are then added along with salt to taste, stirring everything into a smooth batter. The covered bowl is left aside for about twenty minutes, allowing the semolina and oats to absorb the moisture and reach the right consistency required for the dhokla.
Cooking and Tempering Steps
Once the resting period is complete, stir the batter once more to ensure an even texture throughout. Add the eno powder and gently fold it in, making sure to use the batter immediately without letting it sit for too long. Heat a pan or skillet with a little oil, and once hot, add the mustard seeds, sesame seeds, and curry leaves to create a fragrant tempering.
Spreading and Baking
Pour the dhokla batter directly over the prepared tempering and spread it out evenly across the pan. Sprinkle red chilli powder on top and cover the pan with a lid to trap the heat. Let it cook on low to medium flame for roughly ten to fifteen minutes. To check if it is done, insert a toothpick or knife into the centre; if it comes out clean, the dhokla is ready.
Serving and Enjoying
Carefully transfer the cooked tawa rawa dhokla onto a plate and slice it into desired pieces. Garnish with chopped coriander or extra tempering if desired, and serve it piping hot alongside green chutney.
