Homemaker Reena Chaudhary from Darbhanga has shared a traditional recipe for jackfruit seed curry that delivers a rich, robust flavor rivaling classic mutton gravy. While most people discard the seeds after enjoying the ripe fruit, kitchens across Mithila transform them into a satisfying dish. This clever use of ingredients perfectly embodies the age old Indian proverb celebrating maximum value from every part of a fruit.
The Culinary Heritage of Mithila and Seed Preparation
According to Reena Chaudhary, every portion of the jackfruit holds culinary value. While raw jackfruit is widely cooked as a savory vegetable and ripe jackfruit is enjoyed as a sweet seasonal fruit, the seeds are saved for a specialty curry. To prepare this mutton style dish, seeds extracted from ripe jackfruit are first thoroughly washed and spread out to dry under direct sunlight. Once dry, the outer hard white skin peels off easily, revealing the tender seed inside. The cleaned seeds are then placed in a pressure cooker with water and boiled for two whistles until they become soft and tender.
Searing Ingredients and Building the Aromatic Base
Creating the signature texture begins by dicing potatoes into small cubes and frying them in mustard oil until they turn golden brown. After removing the potatoes, the boiled jackfruit seeds are lightly fried in the remaining oil to lock in flavor. For the aromatic base, mustard oil is tempered with bay leaves and dried red chillies. Finely chopped onions are added and sautéed until golden brown, followed by fresh ginger garlic paste, which is cooked until the raw aroma vanishes.
Spice Blending and Simmering the Mutton Style Curry
Achieving the authentic mutton style flavor relies on a precise spice paste. In a small bowl, coriander powder, red chilli powder, turmeric, garam masala, and salt are whisked together with a little water. This spice slurry is poured into the sautéed onion mixture and slow cooked until the oil separates from the masala. The fried potatoes and jackfruit seeds are then tossed into the pan, ensuring every piece is coated in the spiced gravy. Water is added to reach the desired consistency, brought to a boil, and finished with meat masala before simmering for 5 minutes. Alternatively, the curry can be pressure cooked for one whistle to deepen the flavors.
