Rice is a staple that shows up in almost every Indian kitchen every single day, and it's common for a bit of it to be left over after a meal. Many households turn that leftover rice into fried rice, pulao or another dish the very next day, while some people consider it unhealthy and end up feeding it to animals instead. Food safety experts say that cooked rice is perfectly safe to eat again, as long as it is stored the right way and within the right amount of time.
The trouble starts when rice is left out at the wrong temperature for too long. In that situation, bacteria can multiply quickly, raising the risk of food poisoning. On the other hand, if rice is cooled properly, refrigerated in time, and reheated correctly when needed, it not only cuts down the health risk but also keeps the taste and texture of the rice intact. Here is how leftover rice should actually be stored.
Why storing rice correctly matters so much
Leaving cooked rice at room temperature for too long allows bacteria to grow rapidly inside it. A bacterium called Bacillus cereus in particular can be found in rice, and it is the biggest reason behind food poisoning linked to it. On top of that, rice that has been stored the wrong way loses its flavour and its texture turns either sticky or dry, so it no longer tastes as good as it did fresh off the stove.
The right way to store leftover rice in the fridge
The first and most important step after cooking rice is to let it cool down completely. Once it has cooled, pack it into an airtight container and place it in the fridge. Rice should never be left uncovered at room temperature for a long stretch of time. Rice kept in the fridge should be used up within 3 to 4 days, keeping it any longer isn't advisable for health reasons. If it needs to stay safe for longer than that, it can be stored in the freezer instead. Rice that has been frozen properly stays fit to eat for around 6 months.
Keep these points in mind to avoid food poisoning
Avoid the habit of reheating rice again and again. Take out only as much as is needed at a time and heat that, leaving the rest in the fridge. Cooked rice should not be kept at room temperature for more than 2 hours. If rice has, for whatever reason, been left out for longer than that, it is better to throw it away rather than eat it. It's also worth remembering that when reheating rice, it needs to be heated all the way through properly, since that is what brings down the risk of any bacteria surviving in it.
