Examine Color, Texture, and Aroma to Spot Adulteration
Authentic mawa is produced through a lengthy process of simmering pure milk on low heat until most moisture evaporates, preserving the milk's natural nutrients. True khoya features a light off-white or creamy hue. If the product displayed at a shop appears unnaturally bright white or deep yellow, it strongly indicates the presence of artificial colorings or chemical additives.
Touch and smell offer reliable immediate clues about the product's quality. When pressed gently between your fingers, genuine mawa feels remarkably soft and crumbles effortlessly. In contrast, adulterated khoya feels stiff, excessively sticky, or rubbery. Fresh mawa retains a pleasant, subtle aroma of cooked milk. Consumers should immediately avoid any batch that emits chemical, oily, or synthetic scents, as adulterators often use artificial flavorings to mask spoiled or low-grade ingredients.
Use Taste and Heating Tests for Quick Verification
Tasting a tiny portion of mawa provides immediate clarity regarding its authenticity. Pure khoya melts smoothly in the mouth, delivering a naturally rich, creamy, and mildly sweet dairy flavor. Conversely, fake mawa leaves a gritty residue or tastes distinctly like raw flour. Any unusual aftertaste or unpleasant texture is a clear sign to reject the product.
A simple thermal test can further confirm quality before cooking. Gently heating a small piece of mawa causes pure milk solids to soften gradually while releasing a distinct, appetizing dairy fragrance. When purchasing mawa, consumers should buy exclusively from reputed and authorized dairy vendors. For pre-packaged mawa, always inspect the packaging for manufacturing dates, expiration dates, and a valid FSSAI license number.
