Here is a comprehensive guide to crafting this traditional dish right in your home kitchen.
Complete Ingredients List for Patwadi Rassa
To ensure perfect texture and authentic taste, the ingredients are divided into three distinct components for the Patwadi batter, the roasted rassa paste, and the spicy gravy tempering
- Ingredients for Patwadi: 1 cup besan (gram flour), 1 cup water, oil, 1 tsp cumin seeds, 1/4 tsp asafoetida (hing), 1 onion (finely chopped), 1 tbsp ginger-garlic-green chili paste, turmeric powder, Kashmiri red chili powder, 1/2 tsp garam masala, salt to taste, oil as required for greasing, and chopped fresh coriander.
- Ingredients for Rassa Paste: 2 onions, 1/4 piece dry coconut, 10 to 12 garlic cloves, 2 inches ginger, 2 green chillies, 1 tsp sesame seeds, 1/2 tsp poppy seeds (khaskhas), 1 tsp oil, 1 handful fresh coriander, and water as required.
- Ingredients for Rassa Tempering: 2 to 3 tbsp oil, 2 bay leaves, 12 curry leaves, the prepared rassa paste, 2 tsp red chili powder, turmeric powder, salt to taste, and fresh coriander.
Step 1: Preparing the Besan Patwadi Diamonds
Begin by making the Patwadi batter in a large mixing bowl. Whisk together 1 cup besan and 1 cup water until completely smooth and lump-free. Heat oil in a pan over medium heat. Once the oil is hot, add 1 tsp cumin seeds and 1/4 tsp asafoetida. Next, add 1 chopped onion along with 1 tbsp ginger-garlic-green chili paste and sauté for 2 to 3 minutes until translucent.
Add salt to taste, turmeric powder, Kashmiri red chili powder, and 1/2 tsp garam masala, stirring well to combine the spices. Pour in the prepared besan mixture and cook continuously while stirring to prevent lumps. Continue cooking until the mixture thickens into a smooth, cohesive dough. Lightly grease the back of a large thali (plate) with oil. Spread the hot besan dough evenly across the greased surface. Once slightly cooled, slice the dough into neat diamond shapes using a sharp knife.
Step 2: Blending the Aromatic Rassa Paste
The soul of Maharashtrian rassa lies in its roasted spice base. Roast 2 onions and 1/4 piece of dry coconut until lightly charred and fragrant. Transfer the roasted onions and coconut into a blender jar. Add 10 to 12 roasted garlic cloves, 2 inches ginger, 2 green chillies, 1 tsp sesame seeds, and 1/2 tsp poppy seeds.
Pour in 1 tsp oil, add 1 handful of fresh coriander leaves, and add water as needed to facilitate blending. Blend all the ingredients into a thick, smooth paste. This ground spice paste gives the gravy its signature body, deep color, and authentic Maharashtrian flavor profile.
Step 3: Cooking the Spicy Curry Base
To prepare the gravy, heat 2 to 3 tbsp oil in a deep pan. Once heated, add 2 bay leaves and 12 curry leaves, allowing them to crackle and release their essential oils. Add the blended rassa paste to the pan and mix thoroughly. Incorporate 2 tsp spicy red chili powder, garam masala, turmeric powder, and salt to taste.
Sauté the spice paste continuously over low-medium heat until the moisture evaporates and the oil begins to separate from the sides of the pan. Pour in water to achieve the desired gravy consistency and mix well. Allow the rassa to simmer gently on low flame until a vibrant red layer of oil floats to the top. Stir in freshly chopped coriander leaves to finish the gravy.
Step 4: Assembly and Serving
For serving, arrange the sliced besan patwadi diamonds neatly on a plate. Generously pour the piping hot, spicy rassa gravy directly over the patwadi pieces. Garnish with a sprinkle of fresh coriander leaves. Serve immediately alongside warm, traditional bhakri for a complete and satisfying authentic Maharashtrian meal.
