For this preparation, one should always select a bottle gourd that is fresh, green, and tender in texture. To begin the preparation, wash the bottle gourd thoroughly under running water to eliminate any dirt or soil. After washing, peel off the outer skin completely using a peeler. Once peeled, chop the bottle gourd into small, uniform square pieces. The biggest advantage of cutting the gourd into smaller pieces is that the spices can penetrate deep inside each piece, enhancing the overall flavor and making it much easier to eat. While chopping, make sure the pieces are not excessively large, so that there are no difficulties in cooking them during the subsequent stages.
The Crucial Step of Parboiling and Drying
After cutting the bottle gourd into pieces, the next vital stage is to parboil them. For this, boil some water in a deep vessel, and as soon as the water starts boiling, add the chopped bottle gourd pieces. Let these pieces boil gently in the water for about 4 to 5 minutes. The most important thing to keep in mind during this step is that the bottle gourd should not be overcooked or turn mushy. The pieces must retain their solid shape and firm texture. Once the gourd is slightly boiled, remove it from the hot water immediately and drain all the water using a strainer. Now, spread these boiled pieces evenly on a clean cotton cloth or place them directly under the sun. They should be left to dry for about 10 minutes so that any excess moisture on the surface of the bottle gourd dries up completely. Next comes the step of preparing the spicy base for the pickle. Take a clean pan and heat a small amount of pure mustard oil in it. Keep in mind that there is no need to overheat the oil until it smokes; instead, keep the flame on low. Now, mix all the ingredients thoroughly so that an even coating of the spice mixture covers every single piece of the gourd. After mixing the spices, the bottle gourd needs to be cooked for about 2 to 3 minutes. During this process, keep the flame low and stir the mixture constantly. If you leave it on the heat for too long, the bottle gourd might become too soft, which would ruin the traditional crunch of the pickle. Therefore, keeping the cooking time brief is highly recommended.
The Final Step of Storing and Sun-Curing
After cooking the bottle gourd and spices properly, remove the pan from the stove. Allow the freshly prepared pickle to sit uncovered for about 10 to 15 minutes so that it cools down completely. While the pickle is cooling, prepare a clean glass jar with an airtight lid. It is extremely important that the glass jar has absolutely no moisture and is completely dry. Maintaining cleanliness and dryness is crucial for preserving the pickle for a longer duration. Once the pickle has cooled down entirely, carefully transfer it into the jar. After sealing the jar tight, place it under direct sunlight for at least one to two days. This sun-curing process helps the rich, spicy flavors of the spices seep deep into the core of the bottle gourd pieces.
