Street-Style Soya Chaap Is Often Just Maida, Here's How to Make a Healthier Version at Home

Viral videos claim that soya chaap sold outside is often made mostly from maida under unhygienic conditions. Here's the full step-by-step method to make soft, juicy soya chaap at home using soybean badi instead.

Videos going around online recently claim that the soya chaap sold at dhabas, restaurants and street stalls, which many people eat believing it is a protein-rich, healthy soybean product, is in fact made largely from refined flour, or maida, and prepared under fairly unhygienic conditions. Once people watch how it is actually made, most say they lose their appetite for the roadside version entirely. The safer alternative is to make soya chaap at home using soybean badi (soya chunks), following a simple process that keeps things both authentic and clean.

What is wrong with market soya chaap

Soya chaap has grown hugely popular over the last few years and is now sold on almost every street corner. But the videos in circulation suggest that vendors often use large quantities of maida instead of pure soybean, with little attention paid to hygiene during preparation. That is pushing more health-conscious eaters toward making their own soybean badi chaap at home, where both the taste and the ingredients can be controlled.

Preparing the soybean badi base

To start, heat water in a kadhai and stir in about 2 teaspoons of salt. Add 400 grams of soybean badi and boil it for 4 to 5 minutes. Once boiled, rinse the badi in cold water repeatedly until it stops producing foam. Squeeze out the excess water thoroughly, then grind it into a fine paste in a mixer. Mix in 150 grams of maida and 50 grams of besan (gram flour) into this ground paste to form a thick, dough-like base.

Kneading the dough and wrapping it on sticks

Knead this mixture like regular dough for around 3 to 4 minutes, adding roughly 50 grams of milk as you go to make it soft and smooth. Cover it and set it aside for 10 to 15 minutes to rest. Meanwhile, soak wooden spoons or thin sticks in water so the mixture sticks to them easily. Once rested, shape the dough into small balls, roll each one out thin, and cut it into strip-like shapes. Wrap these strips one by one around the soaked wooden sticks.

Freezing and frying the chaap

Place the stick-wrapped chaap in the fridge or freezer for 4 to 5 hours to let it firm up and set. Whenever you are ready to cook, boil the chaap in water for 4 to 5 minutes, then let it cool, at which point it will slide off the sticks easily. Cut the boiled chaap into small pieces and fry them in hot oil on medium flame until they turn a light golden colour.

Turning it into your favourite dishes

Once fried, this homemade soya chaap can be used in whichever recipe you like, tandoori chaap, malai chaap, or a spiced soya chaap curry among them. Making it at home this way means you get to skip the maida-heavy, poorly prepared versions sold outside, while still enjoying the same taste and texture.
