The auspicious festival of Raksha Bandhan remains incomplete without traditional sweets. Symbolizing the pure bond of love between brothers and sisters, this occasion brings a wide array of colorful sweets to market shelves. Among all traditional Indian confections, Kaju Katli holds a special place and remains the top favorite across all age groups. However, during the festive rush, commercially available Kaju Katli often suffers from adulteration, inferior ingredients, and steep prices. Instead of buying expensive or unsafe sweets from shops this year, you can easily prepare authentic, soft, and delicious halwai-style Kaju Katli at home for your brother. By following a few precise techniques, you can achieve perfect texture and melt-in-the-mouth taste right in your kitchen.
Required Ingredients for Kaju Katli
Making pure Kaju Katli at home requires minimal ingredients in accurate proportions. Keep the following items ready before starting
- Cashews: 2 cups (unroasted, whole or broken pieces)
- Sugar: 1 cup
- Water: 1/2 cup
- Desi Ghee: 1 to 2 teaspoons (for gloss and smooth texture)
- Cardamom Powder: 1/4 teaspoon (for fragrance and enhanced flavor)
- Silver Leaf (Chandi Vark): For decoration (optional)
- Butter Paper: For smooth rolling
Step 1: Grinding Cashews into Fine Powder
Place 2 cups of unroasted cashews into a dry blender jar. The most critical aspect of grinding cashews is to use the 'pulse' mode on your blender. Never run the machine continuously, as prolonged friction releases cashew oil, transforming the nuts into a sticky paste instead of a fine powder. Pulse the blender in short intervals. Once ground, pass the cashew powder through a fine mesh sieve. Re-grind any coarse bits left in the sieve so that you get an exceptionally uniform and fine cashew powder.
Step 2: Preparing One-String Sugar Syrup
Take a heavy-bottomed pan or kadai. Add 1 cup of sugar and 1/2 cup of water, placing it over medium heat. Stir continuously until the sugar completely dissolves into the water. The overall consistency of the Kaju Katli depends heavily on achieving the correct syrup stage. Cook until the mixture reaches a 'one-string' (ek tar) consistency. To check, place a drop of syrup between your thumb and forefinger; when pulled apart gently, a thin single thread should form.
Step 3: Combining Cashew Powder with Syrup
Once the single-string syrup is ready, immediately reduce the flame to the lowest setting. Gradually add the sieved cashew powder into the hot syrup while stirring continuously with a spatula. Constant stirring is essential to prevent any lump formation. Keep cooking on low heat as the cashew powder absorbs the syrup and forms a thick, smooth mixture.
Step 4: Cooking to Dough Stage and Testing
Continue cooking the mixture on low flame until it begins to leave the sides of the pan and gathers together like a smooth dough. At this point, add 1 teaspoon of desi ghee and 1/4 teaspoon of cardamom powder to impart a brilliant shine and rich aroma. To verify if the mixture is cooked properly, take a small portion and roll it between your fingers. If it forms a smooth ball without sticking to your skin, turn off the heat instantly. Overcooking beyond this point will make the Katli hard.
Step 5: Kneading the Cashew Dough
Transfer the warm cashew dough onto a piece of butter paper or a clean, lightly greased flat surface. Allow it to cool slightly until it is warm enough to handle comfortably. Knead the dough gently with your hands for 2 to 3 minutes. Kneading while warm is the secret step that provides a silken, crack-free, halwai-like smoothness to the Kaju Katli.
Step 6: Rolling and Applying Silver Vark
Place the smooth dough ball between two sheets of butter paper. Using a rolling pin, roll it out evenly to your preferred thickness. Ensure the slab has uniform thickness throughout. Carefully lay edible silver leaf (chandi vark) across the rolled surface for an authentic festive look.
Step 7: Setting and Cutting Diamond Shapes
Allow the rolled sheet to rest and set at room temperature for about 15 to 20 minutes. Once completely set and cooled, use a sharp knife or a pizza cutter to slice the slab diagonally, creating classic diamond-shaped pieces.
