Maintaining sustained daily energy and physical well-being requires a diet centered on nutrient-dense ingredients. When wholesome elements are introduced into regular eating habits, the body naturally receives vital strength and sustenance. Focusing on this principle, Radhika Prajapati, a homemaker from Koderma, has shared a distinctive recipe for nutrient-packed ladoos. A standout feature of this preparation is that it completely skips both refined sugar and jaggery.
Instead of artificial sweeteners, dates serve as the natural sweetening agent, while also functioning as the binder that holds all ingredients firmly together. The recipe combines fox nuts, almonds, cashews, sesame seeds, raisins, gram flour, and split yellow gram into a single wholesome snack. These commonly available kitchen staples make it remarkably simple to prepare these nourishing treats right at home.
Ingredients and Quantities for the Recipe
According to Radhika Prajapati, preparing these nutritious ladoos requires gathering specific measured proportions. The recipe calls for 250 grams of fox nuts, 500 grams of dates, 100 grams of almonds, 50 grams of cashews, 50 grams of raisins, and 50 grams of sesame seeds. Additionally, cooks need 2 teaspoons of fennel seeds, one bowl of gram flour, one small bowl of split yellow gram, and approximately 250 grams of pure clarified butter.
Roasting Fox Nuts and Dry Fruits on Low Heat
The cooking process begins by heating a pan and adding a small measure of clarified butter. The fox nuts go in first, roasted steadily until they develop a crisp texture, after which they are set aside in a separate bowl. Next, the raisins are gently warmed in a little clarified butter and removed promptly.
Following the same method, the almonds, cashews, sesame seeds, and split yellow gram are roasted sequentially with clarified butter as needed. It is essential to avoid high flame or excessive roasting times. Gently roasting each ingredient over low heat for a few minutes eliminates raw undertones while unlocking a pleasant, fragrant aroma.
Roasting Gram Flour and Softening the Date Puree
Gram flour plays a pivotal role in imparting rich texture and taste to the confection. It must be stirred continuously in the dry or greased pan on gentle heat to prevent burning at the bottom. Once the raw scent dissipates and a nutty fragrance fills the air, the gram flour has reached optimal roasting. All roasted elements are then left to cool down completely.
While the roasted mixture cools, the seeds are removed from the dates, and the flesh is ground into a smooth paste using a mixer grinder. Subsequently, 2 to 3 tablespoons of clarified butter are melted in the pan, and the date paste is cooked briefly over low heat. As soon as the dates soften, the stove is turned off.
Blending the Base and Shaping the Ladoos
The roasted fox nuts, almonds, cashews, sesame seeds, raisins, gram flour, split yellow gram, and 2 teaspoons of fennel seeds are then blended into a uniform coarse powder. This blended powder is thoroughly combined with the warm, softened date puree, ensuring the sticky consistency of the dates binds every dry ingredient together evenly.
Once the mixture cools to a comfortable, workable temperature, small portions are taken by hand and rolled gently into smooth, round balls. Following this straightforward sequence yields delectable sweets without relying on processed sweeteners. The combination of fox nuts, nuts, sesame seeds, lentils, and gram flour supplies vital proteins and minerals, while dates and raisins provide sustained energy and micronutrients.
